Message from Diablo's Cantina at Monte Carlo Resort & Casino

The Light Group's newest restaurant concept, Diablo's Cantina at Monte Carlo Resort & Casino is a 13,000-square-foot multi-level entertainment complex featuring a unique Strip-side location, an open-air design (perfect for people watching), cross-the-border cuisine, an extensive selection of specialty drinks, over 75 tequilas, and high-octane entertainment, creating a Spring Break-like party atmosphere year-round. Sultry seniorita servers add a touch of spice while roaming tequila vixens help get the party started.

Editorial by Citysearch

In Short
Expect Diablo's to be nothing short of a rowdy, non-stop, Spring Break-style party. Blame the fiendishly strong frozen concoctions, like the Big Bertha and the 44-ounce margaritas, the bartenders are whipping up. Or maybe it's those sexy senoritas pushing the 75 varieties of tequilas they serve. So get something in you stomach. The open-air, Strip-side cantina serves tequila barbecue baby back ribs, diablo death wings, red snapper tacos and other south-of-the-border staples with a signature twist.

Key Points

  • Spring Break atmosphere
  • New from the Light Group
  • 13,000 square foot complex

The Inside Scoop

  1. What to Drink - They offer a five-tequila sampler for those who can't decide which to try first.
  2. When to Go - There is an open-air stage for live music on the weekends and for DJs to spin the latest tunes nightly.
  3. The Extras - Money to burn? The Platinum Cadillac Margarita mixes Gran Patron Platinum with Grand Marnier 150th Anniversary, Cointreau and fresh lemon and lime juice. It's $70 a glass or $250 for a pitcher.

Diablo's Cantina at Monte Carlo Resort & Casino is awesome!

by Elizabeth T. | insider_expert Insider Expert | Rank: 3,326

This place has GREAT mexican food! The also have amazing drinks and the salsa is world class. It's worth it to go and grab a drink and chips and salsa. Plus, during the day they are usually handing out 2 for 1 deals. The music is rock'n'roll and you can usually catch whatever sports game you are looking for on their many TV screens. LOVE this place!

One of the best bars on the Strip

by Steven W.

This place was great! My first visit to Vegas and my wife and I stayed at The Monte Carlo. This place is definitely the highlight to that hotel. The Steak Tacos are off the hook. Margaritas are strong. Servers are beautiful. Overall a great place to spend some time during your vacation

Great service food and fun

by G R.

We were here for the NFL division playoffs. We were lucky to get a table for 6. Service was great. Atmosphere for football was perfect and the nachos were the best. Wish we were there for the Super Bowl.

Diablo's Cantina... Great for the College Crowd

by Monica W. | insider_expert Insider Expert | Rank: 4,083

This place is great for the college crowd. The music was loud, there was great energy and drinks aplenty. I was in Vegas for a trade show and needed a place to blow off some steam after a long day of work. Diablo's Cantina was the perfect place for me. My co-workers and I enjoyed a pitcher of margaritas along with the standard chips & salsa.

If you're looking for a place with 5-star dining or at-your-service waiters, than I'd recommend going elsewhere. If you're looking for a place to hang out and enjoy some drinks, then you'd enjoy it here.

Fun Place

by Sandra E. | top100 Top100 | Rank: 72

I went to Diablo's with my daughters (ages 23 and 26) and we had a great time. We were upstairs seated on the deck. We had a great view of the MGM at night. The Margarita's were good and the food we ordered was OK. The portions were large. We got some great pictures.

Not so tasty, not so great

by Sandra J. | insider_expert Insider Expert | Rank: 9,460

This is not a place for a family dining. With the statue of a she devil at the top of the building it is not a suprise that i did not like this place. There is a bar in the middle of the restaurant and another bar off to the side that serves large magaritas.

Our table was very close to the bar. People were standing too close by as we tried to eat our food. Our waitress was very weird and the food lack flavor. The nachos were really big but I was disappointed because the cheese was so thick and stiff that all the chips were stuck together!

The next time I am in Vegas I will make sure to stay far away!

Unique Mexican food on the Vegas Strip

by Sharletha J. | insider_expert Insider Expert | Rank: 2,513

On our first night stay at the Monte Carlo, we decided to pick a restaurant in the hotel. We entered Diablo's through the hotel side which was very different than the outside view the hotel. It looked like a casual dining restaurant but we soon felt like we were decending to a dungeon and found out it was more of a bar. There is a huge bar in the center of the restaurant, taking up most of the space and a side bar for Margaritas.

There was a 30 minute wait so we decided to stand outside since there was no seating area. The hostess was not friendly.

The place is a bit chaotic. We finally were seated and our waiter seemed a bit spacey or maybe drunk. Our table was very close to the bar and people were hanging around and over us as we were eating. We ordered the chicken nachos, empanatas and taquitos. They were a bit skimpy on the empanatas and taquitos but the Chicken nachos was more for your money.

PROS: Good place for happy hour.
CONS: Margaritas are expensive and there is not a great variety on the menu.

I would go back just for the nachos.

Turtles move faster than the bartenders.

by CSMobileUser2

The food and atmosphere is great but the fact that the bartenders, upstairs and downstairs, are complete d-bags makes me want to never return to this place. It takes way too long to get a drink here, even when it's not busy. Plus, never ask for salt with your patron when your doing a round of shots. You'll be asking to much of your bartender.

Great Atmosphere, Location, & Food

by JenLE82

I went with a group of friends to Diablos in the afternoon. We got great seats on the top balcony and were able to watch all the people pass by on their way to NYNY or further down the strip. I had a few margaritas, which were all very good. The bar tender was very friendly and I never had to stand long to wait for my drink. We decided to order some food after awhile and put our order in with the bar tender. When the food came out, they forgot our chips & salsa, but were quick to correct this issue and apologized. No harm done in the end. This spot will be first on my list for the next Vegas trip!

Pros: great spot for people watching, friendly staff

Cons: none

This Place Rocks

by sschneider4711

Diablo's was recomended by friends who have been there before, and I finally wanted to check it out. Great bar scene with hot girls. The hostess sat me and friends right by the strip, (awsome people watching) the foot and drinks were great and they had a great music selection. After we ate, we went up to the patio bar where we spent about two more hours listening to great music and enyoying great margaritas and mojitos. All over all a fun place where you can eat and drink and chill, by over looking the strip.
will be back soon!!!!

Pros: Great Bar scene

Poor service and overpriced drinks!

by MIWendy

My husband and I go to Vegas once a year and have dined at some awesome restaurants. Diablos Cantina is NOT one of them. We were looking for a fun place to have dinner after walking the strip. The lights and the restaurant itself were very appealing so we entered and were seated. The decor was simple and authentic. Everything on the menu was ala cart. This would be ok if the pricing was accordingly. However, a quesadilla was almost $20.00. Add rice and your looking at $25.00. I personally have never been to a mexican restaurant where the chips and salsa were not brought out right away with no charge. Here you pay for them and any sauces. (I will say the chips were very good.) Our meals were ok but definately not worth the price we paid for them. Our waiter did not come around to fill our water or see if we needed anything. I had to finally get up and go to the bar for a glass of water which was given to me in a plastic cup. We finally received our bill and could not believe they charged us $8.00 a piece for 2 domestic beers that were brought to us in a plastic non chilled mug and were a little better than room temperature. My suggestion go to Taco Bell!

Pros: Atmosphere

Cons: Service, food value, drink value

Worse Service EVER

by LauraH213

Need I say more. My parents come in from out of town about three or four times a year. They are very good gamblers at the MGM/Mirage group. They usually stay at the Monte Carlo, but due to some issues (personal not MGM/Mirage group) they stayed at NYNY this time. We have been to Diablo's 3 three times now, and each time has been bad. We go there becuase Mom loves Mexican and we get it comped. Well this last time (yesterday at 1:30 to 2:30P) we went upstairs to sit by the railling to eat and drink. I told the host that we were going to snack and drink. She started to get menus, but then when my dad finally got up the stairs, he said he just wanted a drink so she said sit at the bar. We tried to sit at a table then she PUSHED us out of the table for someone "eating" I had planned on getting nachos, drinks (the four of us all wanted drinks, and alot of them) and other snacks.
It gets better, we moved to another table, not by the railing) and waited for another 10 minutes for a server to help us. We complained that we wanted to eat and was told we could not sit where we wanted because my dad had stated he only wanted drinks. We left and on our way out, I told a group coming in not to eat there and they turned around and left also.
They have angered both a local and a high ranking member of the MGM/Mirage players club. I will tell anyone who will listen not to go there from here on out. I also am boycotting all Light management group places from here on out. I will never eat at Diablo's again, or any of the other Light group places. I feel if you can't make it right for one person, you won't care about anyone else. The service is horrible, the staff is rude and the food is horrible. Oh and don't forget that the upstairs looks like it hasn't been cleaned in a while. Do NOT go there.

Were there servers here?

by baylorwarren

I travel almost everywhere on business by myself - so I get a different taste of life than the couples and groups. I feel you can really tell what a restaurant is going to be like given the service you receive as a single diner. Most places, you can expect to be a little slower, or faster, but you won't get the attention a group would. Understandable.

Here - I was asked if I would mind sitting at a high table in the bar area because the dinner rush was going to happen soon. It was 530- but whatever. I will make them as happy as I can. I sat for 30 minutes before I went back to the hostess and asked for a server. She brought me one drink and disappeared for another 30 before I left a couple bucks on the table and walked. I was so hungry I could have eaten a horse, I'm Central Time, so it was 630 when I sat and by 730 I hadn't even been able to lick the salt off a chip.

The food looked and smelled wonderful. The drink the bartender made was super. Try their frozen signature drinks... Tasty tasty tasty. Service... ick.

Pros: Great atmosphere. Great place to get the party started or sit in the back with a date.

Cons: Service around the bar was non existant.

Good margaritas, great vibe, good food

by heckmanpage

We ate lunch here because we got coupons. We were seated by an open window on a beatiful day. I asked the server if drinks were included in the 15% off coupon. I was surprised when he said yes. We ordered a pitcher of margaritas which were served with glasses rimmed with crushed red pepper and salt. When I looked at the pitcher, I was disappointed. It looked small. However, when we were done with the pitcher, we were pretty happy. The food was really good and came out fast. Service was excellent. We told our server that if he took care of us, we would take care of him. He was friendly and fast. I wanted a plastic Diablo cup that could only be purchased with a $20 drink. He hooked us up and we tipped him well. I would recommend this place if you're looking for a fun laid-back atmosphere.

Pros: Good margaritas, good service

Cons: Wait can be long

Best Margartias, Nachos, and free entertainment on the Strip

by jspark6785

Diablos atmosphere is fun and edgy. The wait staff is friendly, professional, yet fun. The inside decor makes you feel like you just stepped off the Las Vegas strip and into a spring break college hang out in Cabo San Lucas. The food is excellent and the service is quick. I love their college night on Thursdays. They always have some kind of fun and quirky event and there are people there that hand out free drink passes. All in all it's a great place to dine, drink, and hang out with friends!

Pros: Atmoshphere, location, tasty food, entertainment

Cons: none

great place to party on the strip

by lovinhatin

It's a poppin' bar with no cover on the strip. I've seen live bands here, some okay, some not so great, but it's still a rockin' atmosphere any night. Usually they have deejays. Really feels like being on spring break. It's got a nice younger crowd for the most part, and that's right up my alley. Music is kind of loud, but I've only been there at night, so I can't really comment on what it's like during the day. At night it's a party atmosphere with tequila girls and gogo dancers. The food is great, service is on par, and I really can't complain about the ice cold beers and delicious margaritas. Places on the strip are known to be skimpy on their alcohol content, but not this place. I give it my two thumbs up!

Not worth it

by lovevegas53080

We stopped here for lunch back in November. I have been to Vegas many times and definately would not go back to this place. We had a waiter who tried to sell us a pitcher of margaritas for over almost $50.00 when the menu said $42.00 which is still a rip off. The food was over priced and not good. We ordered some gauc and it came in this large dish but only had about a 1/4 cup in it. Service was horrible. It was over $110.00 for four lunches and a pitcher of margaritas.

Best Drinks in Town!!!!

by aidansmommy2006

I went to eat here with my husband and 16 month old son...and had a great time. It is very Spring Break like...but it is a great place for family dining too! The wait staff was so nice and patient with our group, even as my son was throwing food EVERYWHERE! Make sure your try the Mojito's they are the best I have ever had.

Pros: Always a good time with plenty of action. Great drinks!!

Cons: Kind of loud and hard to talk to the rest of your group.

Huge Portions and Hotties

by baybeegrrl

Can I just say that the bartenders and servers here are HOT? And I mean both the guys and girls. I'm a chick and the eye candy is just awesome! Lol. Anyways, the food here is great and the portions are so big you can probably split a plate with a friend. I got the beef tacos and they were delicious. Juicy and tasty! My friend got the grilled shrimp and it smelled so good I had to have a bit. Next time I'm trying that for sure. I definitely recommend this place, and it's perfect for your out of town friends since it's right on the strip... not inside a casino.

Pros: Hot staff and huge yummy portions

Pleasantly Surprised

by madfan

After reading the reviews here for Diablo's. I was hesitant to give it a try. We went to Vegas last weekend and the outstide of the place is so inviting, that I decided I'd give it a shot despite some of the poor reviews. I was pleasantly surprised! We had a large party (10) and we were seated promptly. The atmosphere is fun, the waiter was not spectacularly attentive, but he did his job. The food was super! My husband and I had the hot wings - they were meaty & spicy. We also had the caesar salad which was extremely tasty- the best caesar I've had in a while- lots of dressing & fresh, crisp lettuce, nice amount of parm. cheese & croutons too. The rest of our party had the steak fajitas and they were equally satisfied. The portions were not small by any means. We all "split" our plates with our significant others and there was plenty of food. Can't say anything bout the margaritas but the bottled beers were served very cold. I will return next time I'm in Vegas!

Pros: good portions, tasty food

A Definate recommend for FOOD and FUN!!!

by KAYEP

I had wanted to go in to this cantina back in September 07 (when the outside patio was open) but didn't. So it was definatley on my list "TO DO" when we went again in December and so glad we did. After looking overthe menu I decided on the "South of the Border" tortilla soup (off the "starters" list) I didn't want to get to full, needed to leave some room for the margaritas. It was EXCELLENT!!! Very filling!!! My husband ordered the Steak Tacos and he loved them as well. I did sneak a bite and have to agree they were very good!!! We ordered a pitcher of the "Twisted Sister" mixed drink and it was very yummy. If you are going to drink, it is a better deal to order the pitcher and not a single glass. It was well mixed and I felt a bit tipsy after. I loved the atmosphere. Our waitress could have smiled a little more but she was attentative. The hostesses at the front were lovely and so nice!!! A definate recommend for food and fun!!!

Pros: Good food, Good Service, Good Drink

Cons: A littel more smile on the server would be good...:)

Best Margaritas in Town

by ladybug421

I have a special place in my heart for Mexican food. Being from Cali, my expectations are a bit higher than most, but for what it is, the food is not bad. It definitely leans more towards the commercial, tex-mex, Chevy's style (but WAY better) of "Mexican" food, so if you're looking for traditional, then unfortunately this isn't the place. But if you like twists on the old favorites, give this place a try. Not to mention, the margaritas are just to die for. If you haven't tried the margaritas at this place yet, you are definitely missing out. The only thing is the prices are kind of high, but I'm not sure if that might be normal for places like that on the strip. Next time I head to Vegas, I think I'll try going late night. It came recommended by the waitress!

Pros: The Margaritas!

Cons: Steep prices

The Most Fun!!

by Wolfmother702

I live in Las Vegas and go down to the strip a lot. It's always cool to see the new places that open up in casinos that we haven't frequented too often. Diablo's is definitly a great addition to the Monte Carlo!! I've been a few times now, on the weekends and during the week. A couple times when we went there were all these crazy characters running around!! I saw a life size chicken and a guy in full wrestling suit do the Soulja Boy on stage!! sooooo funny!!! They also have a great drink menu of all drinks made with my favorite....Tequila!! I would reccomend Diablo's to anyone. It's a perfect place for a great quesadilla (the best!!) and then soooo much fun to stay and drink after dinner. A+ for Diablos!

Great place to knock back a few on the strip

by prepsage

I try to avoid the strip in general, but i enjoy stopping by Diablo's when I do. Easy access, non-pretentious atmosphere. Wait staff was great, always attentive (and I'm low-maintenance) and prompt. Prices are pretty average for being on the strip. I get the steak sandwich and a nice draft beer - a monster plate of tasty food.

Good Food, Friendly staff, Nice atmosphere. Could use better music

TIP: Don't go to the main bar for your drinks (wait tends to be longer). Get a table or head over to the side bar.

awful service

by k714

I was there December 14th a friday night. Our waitress was more of a ditz then Paris Hilton. We had to ask for the same beers three times. I had to ask her for hot sauce four times. We only got our second beer when we were done with our food. I don't care how good the food is with service as bad as we had. Too many things to mention, but I've never been so angry at a waitress, and that's coming from a waitress myself. She was awful. Stay away from the long dark hair ditz. She will ruin your meal. I felt like getting up and taking care of my own table.

DON'T WASTE YOUR TIME OR MONEY

by dcody

I was there recently during NFR with a group of friends. The service was horrible. The bartender was ungodly slow and did not know anything about the coupons the bar was handing out at the rodeo. She took forever to serve us our overpriced, flat beer, even though we were sitting right in front of her. The margaritas were tiny, expensive, and had no taste. I've had better margaritas at the old WestwardHo, and believe me those were bad. The manager had a "I don't care" attitude when informed of the bad service and drinks. If I want to buy expensive liquor and look at wait staff in scanty outfits I'll go to Coyote Ugly. At least they know how to make a drink! They'd have to make a management and bartender overhaul before I'd even consider stepping through their doors again.

Pros: Friendly greeting at the door.

Cons: Poor service. Lousy overpriced drinks. Stale chips and salsa.

Avoid at all costs

by tigerjuice

My corporate officers and I make several treks to Las Vegas each year and everytime try to find someplace new to recommend to associates. This year one that we explored was Diablos Cantina, what a mistake. It is a sad statement when the best part of the experience was that the door was opened for us. The staff was inefficient, lacked knowledge about advertised specials and basically ignored us to excess. There are 2 bars, one of which had no stools, the draft beer is $8 and tasted flat and a poor excuse for a margarita (in the smallest margarita glass I've ever seen) was $13. The chips were pieces and stale, the "salsa" which is actually closer to relish is served in small cups on a board and couldn't have had more than 2 tablespoons of product. When we asked to speak to the manager, she seemed to be equally apathetic. While thanking us for notifying her that the staff was not aware of advertised specials she didn't seem interested that it took 30 minutes to get our chips and salsa and that the drinks were less than satisfactory. They were not busy by any means and scantily clad yet surly waitstaff will not be a big draw for long.

The Last Place To Visit On The Strip

by bubox

We were told when on the strip that Diablo's was a fun place to stop & have a Margarita, watch the world go by & have a bite to eat. So when we were on the strip the last time, we stopped in to see what the buzz was about.
We were lucky enough to get a table right on the rail overlooking the sidewalk so we could people watch while we were there, our favorite past time while on the strip. This turned out to be the only bright spot in our visit.
To begin with, I'm sick of restaurants thinking that SALT is a main ingredient in any dish. I know that cooking shows are popularizing the use of sea salt, kosher salt & etc but, it's still NOT supposed to be the main ingredient!
Over salting everything is not good for the body & doesn't always inhance the taste. Some customers cannot tolerate that much salt & dishes should be allowed to be salted by the patron. Our Margarita tasted like salt & lime with little tequila or anything else. Ordered my Margarita blended NO SALT & still tasted just as salty as my friends. The chips oversalted & salsa alone tasted like salt.
Progressed from bad to worse.
NO traditional mexican dishes on the menu. I'm a big chili verde fan & there was nothing even close to this on the menu. We each ate half then exchanged plates to taste a variety of the offerings.
We both agreed on two things. Both dinners, TOGETHER, had less than 4 oz of meat combined & all we tasted was salt. Everything is overpriced & miniaturized serving size. Disgusted, I wanted to send them back but, my cohort did not want to bring attention to us. Drinks small, over priced & poorly mixed, dinners the same, over salted mini meals.
Service was poor. The servers are inexperienced & expected a tip just for eventually showing up, & being young & pretty. I might be younger, but, I know good service from bad. We liked the atmosphere, we liked the location (even though we don't really care for the Monte Carlo). I can't imagine being trapped inside!

Super Fun Atmosphere

by stricklandj

The theme of this place is great. I love the giant flaming devil girl on the outside. You can't miss this place! The food is average for any mexican type joint, but the place is a fun party at night. The beer bong they were carrying around is a little weird, but the drinks are good, and my girlfriends and I had a total blast. It was my best friend's first time in Las Vegas, and she can't wait to come back. I'd definitely take my friends there again.

Pros: Atmosphere, decor, drinks.

Cons: Pricey.

This place is a joke!

by smd_ca

Okay, I'll admit that I don't normally like rowdy bar type places, and prefer clubs/lounges, but this is a new place,so I thought I'd give it a try. WHAT A MISTAKE!

THE PLACE: We went there last Saturday night and it SUCKED. It's located at the very front of the Monte Carlo. There's a restaurant (didn't eat there, so can't say anything about the food) downstairs, and the bar is upstairs. Cover was $5. When we went, the bar?s roof was opened up so it was VERY COLD.There were heaters, but the wind was blowing like crazy so it didn't matter.

THE MUSIC: We got there right when a band finished its set, and afterward the DJ put on hip-hop. The problem with the music was that you couldn't hear it over the obnoxious fat guy on stage dressed in a lucha libre (Mexican wrestler) costume. He was on a microphone yelling over the music the whole time, attempting to get the crowd pumped up, but it was just ANNOYING! Oh, and I can't forget about the 6 person beer bong he pulled out- he picked people from the crowd and he and the go-go dancers poured beer down this funnel. This gives you an idea of the type of place this is.

THE BAR: Now, all this might have been funnier (or even more fun) if I would've been a little tipsier from the drinks. This leads me to the WORST part about this place. It takes about 20 min. to order a drink from the MOST OBNOXIOUS and ARROGANT bartenders I have EVER encountered. ANYWHERE (and I?ve dealt with some retarded bartenders-I live in LA). Instead of pouring drinks, ALL they do is lip sync the bad music (when you can hear it), dance and point to people, like they were on stage themselves (think guys from A Night at the Roxbury). I was genuinely embarrassed for them. After putting up with these tools, you would think MAYBE you could get a decent drink. Of course not! They were weak, tiny and mostly ice.

THE GIST: If you don?t want to be treated like cr@p and you want to dance, DO NOT go to Diablo?s!!

Pros: Right on The Strip

Cons: Bad drinks, bad bartenders, bad music
