Love the oysters here

I love oysters but am afraid to order them in most places because they have to be super fresh. There is only one place I trust in San Diego (Oceanaire)- ( I usually stick to places like Seattle & New York that have plenty of options)

But thank goodness for SeaBlue where the oysters are flown in daily and are DELICIOUS.

The service is good too !

The food is so tasty that you don't want to stop eating. Everytime you take abite you want more and don't want it to end. I like going on week days less crowed unless your into that sort of thing. The prices are high but they are worth it .MGM you got this one right again...

There are a lot of mouthwatering choices. Shared tapas style appetizers and oysters, then shared a salad. We also had drinks from the bar. The atmosphere was nice, and we would eat here again.

This is one of my favorite restaurants inside the MGM. The food is to die for. The atmosphere is of course lively and fun and the people are the same. The steamed garlic shrimp and crab are my favas.

Not impresssed

My husband really wanted to go to this restaurant. So when I called to make reservations, I was informed that there was a dress code. We really dressed up and looked nice. When we got there, we were told we'd have to wait a few minutes (it wasnt quite 530 and they dont start serving dinner until 530) so we waited nearby. Right after we checked in, this family who were dressed sloppily walks up and says they have reservations for 530. They were seated immediately and we were STILL waiting! Why were they seated before 530 and we had to wait?! Then we were seated next to a family with a screaming baby-oh great! I love ear piercing noises when I want to enjoy a nice meal.
The food was mediocre, not great. It certainly wasn't worth $45 per person!

Cons: overpriced, service not good

After reading some of the previous reviews about Seablue, I was a little worried when I learned it would be a stop on my recent trip to vegas. I was absolutely blown away with my experience! We arrived and were sat promptly in an over-sized booth with a view of the open kitchen. Our server was fantastic and seemed to have an answer for every question asked. She recommended the Octupus app., Seafood Paella, and the Loup de Mer. All were great, but the Octupus was nothing short of perfection! Tenderized in yogurt, you could cut it with your fork! I wasnt impressed with decor, a little cartoonish with big, HUGE red drum-looking light fixtures hanging above our table. However, I was there to enjoy the food, not the decorations.

After reading several reviews I had to chime in. While Seablue is pricey it is worth every penny. I came for dinner in April of 2007. Every part of my meal was superb. The service was outstanding,due to the care taken to see that I enjoyed every aspect of my dining experience. The highlight of my meal was paella
Select Seasonal Shellfish, Chorizo Sausage, Grilled Quail, Saddle of Rabbit I copied the menu page to give you a better idea of the dish. I've had paella around the world and this was by far the best I've ever tasted.

OK food, lousy service, way overpriced.

The food was good; the fish was fresh and flavorful. The cooking wasn't outstanding - the sides we're somewhat plain and I found the raw appetizer sampler boring. The wine list was decent, but no sommolier in sight to recommend anything obscure. But what really ruined this restaurant for me was the ambience and service. The interior is noisy, with lots of hard surfaces, and waiters either running around in a hurry or standing with each other chatting and ignoring the customers. Although we had a reservation we had to wait half an hour for our table. The hostess then came and retrieved us from the bar so that we could stand and watch while they cleaned and set the table. We ordered one of each of the 8 oysters for everyone at the table to start, and they joust brought them out in a big bowl instead of indiviual bowls and never identified which oyster was which. At $4 apiece that't the least they could do. We never could get our bread basket refilled despite repeated requests- at one point one of my guests held the basket above his head in the hope that a passing waiter might notice. I found myself constantly refilling my guests wine glasses as they would run dry and no waiter would come by and fill them. Worse, once a waiter did refill my red wine glass and managed to spill the red wine into my white wine as well as water. At $150/bottle, there goes a $30 glass of white with nary an apology.

The food is pleasant but way overpriced and the servcie is worse than at most TGIFridays. I will not return.

Great service but the food was dissapointing

I expected a lot since I know Micheal Minna is an awesome chef however I was dissapointed by the food. Everything was extremely salty and the hamachi appetizer was very fishy. The oysters however were very good and fresh.

The bill came out to $250 for the two of us and we didnt even have any dessert. It was a good experience but I would never go back.

Great! Not your ordinary seafood restaurant....

Dinner was pretty good although a little salty (seafood tends to be anyways). We had the prix fixe and unfortunately by the time we got to the final steak/shrimp 'taster entree', we were stuffed. What a shame, because they were really good. Appetizers were OK. Sea bass was quite good. Overall, it's pretty pricey (~$250 for two, sans drinks). It's one of those places worth trying once but with so many options in Vegas, I'd probably try another restaurant over coming back.

Service was excellent.

The Best Sea Bass

This may sound naive of me but I never knew Las Vegas was a hot spot for some of the World's finest dining. This spot in particular is great for seafood. I had the best Chilean Sea bass of my life here. Be ready to spend money however. This place is not cheap.

11 of us did the "family style" meal here this past weekend...huge variety of seafood for an appetizer(2 different types of oysters, shrimp coctail, crab legs) and a nice selection for main course(kobe flat iron, fish(?), scallops, lobster, mashed potatoes, fresh veggies etc...),the seafood was fresh and spectacular...the kobe flat iron was amazing...there was a special fish whose name escapes me...that was the best I've ever had. Plenty of everything so that each person gets some of each. We couldn't finish everything.

The family style is well worth it. With 5 bottles of wine , coffee and tax/tip included, we spent $130 each. Not cheap, but well worth it for a 3 hour meal of more great food than you can finish. If you don't mind spending the $$, this is worth it. If you do 1 great meal every once in a while...this could be it.

The service could not have been better.

Pros: Fresh food, incredible service, all around amazing experience.

I went there with 13 other guys for a bachelor party dinner after not being able to get a table at Craftsteak. Aside from the bread taking forever to get to the table, the food and service were pretty much perfect. I had oysters, a raw tuna appetizer, and a 14oz. bone-in New York steak. After a day of drinking by the pool, a piece of fish wasn't going to cut it. The tuna was superb. The oyster was fresh and delicious and the steak was cooked perfectly and had great beef flavour. It was equal or better than I've had at some L.A. steakhouses. For a couple drinks, food and tip, the bill came to about $100/person, which is cheaper than sitting at a blackjack table for 15 minutes.

WHAT A DISAPPOINTMENT!!!

This was a "must do" for our visit by a "Food TV chef personality". Boy, were they off the mark! Visual ambiance of the restaurant was kool, the music was too loud and the droning beat drove me crazy by entree time. The waite staff was professional/properly attentive. The biggest disappointment was the food. The raw clams smelled fishy and were tough, additionally they were overpriced. "Create your own salad" was fun, but at $14/pp, overpriced. Our lobster entree smelled fishy, was both overcooked/rubbery and undercooked. Asparagus was not the young/tender vegetable, but an overgrown/ stringy disappointment. Being from the food industry we would have had to offer some discounts or something to hope to get return business. It's like they know their serving tourists and don't care if they get bad reviews. For our $200+ dollars we'll stick with our superb Dallas restaurants.

Wow was that pricey

Ok, I don't like seafood that much as it is but if you go anywhere, I guess Seablue was a good choice for the variety. Appetizers were WONDERFUL. You can do a small "tasting" menu of the cold and hot appetizers. I chose the soup trio and also the fried appetizer plate- Yummmy. And the oysters were also good but very very pricey. My main entree, some fish poached in a broth with foi gras, was NOT very good. The combination definitely did not mix for me. My dinner companions liked their entrees but I don't think they were overwhelmed by it. Dessert was decent but nothing outstanding. Wine selection was good though overpriced.

Expensive disappointment

Seablue fell below our expectations. The staff was wonderful, and some of the dishes were excellent (appetizers, especially the lobster corndogs were a delight.) However, the ambiance and main dishes disappointed. Both our fish entrees, while good but not great, were noticeably undercooked. There's an odd ambiance with design elements that, nice individually, didn't seem to work together. The table for two was tiny and cramped. They cheerfully moved us to a comfortable large booth. for the price, I expected more than paper placemats! However, it was the background music that really ruined our experience. It was too loud, with a driving beat that never changed. The songs changed, but the beat never did, and after an hour, we were anxious to leave to get away from the music. In the end, neither the food nor the ambiance created a relaxing, enjoyable experience.

ONCE AGAIN THE MGM AND MICHAEL MINA DO IT AGAIN. THE WONDERFUL FRESH INGREDIENTS WITH A FRIENDLY KNOWLEDGABLE WAIT STAFF MAKE THIS THE PLACE TO DINE. THE DECOR IS UNIQUE WITH A FISH TANK AT THE DOOR. AN OPEN KITCHEN GIVES OFF THE AROMAS THAT MAKE YOUR MOUTH WATER. DINE HERE FOR AN INTIMATE DINNER OR WITH A GROUP. YOUR ODERS WILL BE DELIEVED PRMPTLY AND PROFESSIONALY

A fantastic birthday meal!

My boyfriend and I went here for my birthday and had one of the best meals of our lives. The fish was amazing...fresh, so beautifully prepared, and absolutely delicious. Our dessert (a chocolate bombe) was a superb finish. Even their drinks were top notch (I had a dirty martini to DIE for!)
This was the best meal of our trip, hands down. I'd go back to Vegas just for this restaurant!
