Chip is a marvelous chef, who studied at Drexel, and worked at la bec fin for five years. He loves to cook and it is evident in the gourmet meals, and sauces that he creates he creates. It's an elegant atmosphere with attentive waiters, and very pricey but your palate will thank you.

Although Charles Roman Catering is the business listing, the restaurant is known as Blackfish, as evidenced by their website.

We're always looking for somewhere in the neighborhood that has a byo policy & can rival Center City's restaurants. It rarely happens, but not so last night. We were joined by two people who live in town.

Blackfish is on Fayette Street in Conshohocken. It's light & airy, minimally decorated with hardwood floors, beadboard walls, cookbooks nicely displayed, and a large mirror which enhances the room.

Considering it was Monday night, I was really surprised by the fact that the restaurant was full. The crowd was of mixed ages & composition: couples, a group of women celebrating the birthday of one of them (It was my husband's b'day too.), 2-tops, 4-tops. The noise level could be improved, but they're getting there.

The food was excellent. Our friends split a fois gras appetizer & thoroughly enjoyed it while my husband & I opted for salads. His was a red beet & chevre, which he pronounced delicious, & mine was a baby arugula with roasted garlic & a thick, creamy garlic vinaigrette. The stage was set for a happy evening & we weren't disappointed.

My husband & one of our friends ordered bouillabaisse. It looked very different from the bouillabaisse I'm used to as it had no tomatoes in it and was comprised of mostly fish, not seafood. Both loved it. Our other friend & I ordered the blackfish which was served with pumpkin puree, pieces of celery root, & a cider froth. It was marvelous & just the right amount of food. Big eaters may be disappointed, but we were perfectly satisfied.

Desserts: A molten chocolate cake served with a small scoop of vanilla ice cream & a lemon tart was delicious. Coffee, espressos, & cappuccino rounded out the meal.

Blackfish is not cheap by a long shot, but top quality, beautiful presentations, excellent service, and outstanding food make it a place to which we return. It was a great birthday celebration accompanied by terrific food, wine, & company.
