If you're unfamiliar with Hard Eight, let me give you a brief rundown of the process. When you walk in, you go straight up to the pit (well, after about a 30 minute wait in line). You order your assorted meats by the pound, or fraction thereof. They weigh everything and slap a barcoded sticker on your tray. Once you're finished there, grab your grub and head inside to pick out your side dishes.

I ordered a meat-tastic smorgasbord: 4 pork ribs, 3 slices of ham, 1/4 link of regular sausage, 1/4 lb. of sliced brisket, and 4 shrimp poppers. I also added a side of fries just for good measure.

The fries were really good and pleasantly homemade. They were crisp, but certainly not hard. I found just the right amount of seasoning here. Although, their side of fries is probably large enough for 3 people to share.

With the ham, I didn't find quite as much smoke as I was expecting. The crust was nice and crispy though. There was a lot of salt, but the ham lacked any other seasonings. As for the sausage, it had a fairly pale color, suggesting that it needed more time in the smokers. The flavor of the sausage was good overall, and it did have plenty of pepper. Flavor aside, something was just a bit off about it.

The brisket had a nice amount of smoke, with a decently pronounced smoke ring. It was also pretty tender and juicy. The only thing I found lacking was the presentation. I wish the pitmaster had cut it properly so I could have gotten some actual slices rather than a stringy chopped mess.

Their shrimp poppers are basically shrimp and jalapeno wrapped in bacon. They look bitesize, but leaving the tails on makes that a little difficult. The bacon was tough, and I think it had been warming on the pit for quite a while. One of my 4 poppers was actually of the chicken variety by mistake. Surprisingly, this was the only one that had any actual spiciness to it.

I left the ribs for last. They had a good crust and a decent red smokey hue on the edge. I didn't find much flavor other than salt and smoke. The meat was nice and juicy, but to the point that it fell right off the bone with nothing more than a gentle tug. Overcooked ribs strike again.

Sorry Hard Eight, but you crapped out.

Great BBQ and cool place..my top favorites are below(in no particular order) and Hard 8 definatley makes the list. I dont know much about Ft.Worth area BBQ as I am sure there are some great ones but we drive from Plano for the unique

In my opion it is a little pricey for lunch but when it is right across the road from your office and you smell the out side smoking first thing in the morning you don't care. And it lives up to the smell.

don't eat before you go.. cause you will leave fat, happy, sassy and suckin your fingers the rest of the day.... you may even smell of smoke... OMG how long has this place been 1/2 mile from my office and i did not know it

I come here for lunch when I am in the area. It is great bbq. It is a bit pricey, but is worth it. Get the spicy sausage with cheese in it along with your meal. Well worth it. The complimentary beans are great as well. The place is large, so even when it is crowded (which it normally is for lunch), it is quick. Also has plenty of parking.

I absolutely love this place. I grew up in a Barbecue town and I am so picky that I just can't stand the typical chain restraunts. The atmosphere is total roadhouse and the meat is to die for.

Keep in mind that they sell everything by the pound and you will most likely over order, but it is even better as a left over. I highly recommend the half a chicken for around $6 it is a great lunch or dinner and easily can be eaten as two meals. Everything is good, but the Turkey and Jalapeno smoked poppers are the best.

The side dishes are not your typical fanfare. I prefer the sides at Dickies, but the meat is not comparable. The only thing I would avoid is the tea because it is carbonated instead of fresh brewed.

Very motorcycle friendly, they even have parking for us. It is in a strange spot for such a large restraunt, but regardless of the time of day they normally have a room full of raving fans. The outside porch with fireplace and TV's is wonderful during the Fall or Spring.

A great place to show some Texas hospitality to the out of towner.
