Late last summer 2010, husband and wife; Paul and Marion Johnson opened Baker & Olive on South El Camino Real.

Both Johnson's had previously been working in the corporate world, Paul as the CEO of a multinational company and Marion as the VP of marketing for a beauty company.

As their family grew, they decided it was time to turn their focus on their two wineries in Napa valley, Fiftyrow vineyards and Smokescreen cellars; and to open the first baker & olive, in New Encinitas.

Paul has lived and worked for over 15 years in Europe; while Marion was born and raised in Frankfurt, Germany. Their shared passion for wine and the love of the European lifestyle led them to the concept for baker & olive; after an extensive search for the best products at the best price, Baker & Olive was born; a specialty shop with a extensive product line of custom created olive oils, balsamic vinegars and hand-sculpted artisan breads.

Sometimes sweet and smooth, at other times sharp, grassy and peppery, olive oil is the cornerstone of their kitchen. They use it liberally, creatively, and with relish.

Paul says that, "The right vinegar can make a meal. It can be as a dressing or a marinade, dripped carefully onto vegetables, cheeses, fruits or even deserts."

Baker & Olive is part of an exciting revival of artisan bread baking that dates back prior to the industrial revolution.

In addition, Fallot Dijon mustards, delicious confits from L'epicurien, spices from Terre Exotique, honeys from Bee Raw, teas from Steven Smith and much more new to the Encinitas market can be found there.
