Proto's first opened in 1999, and has been serving true Neapolitan pizza ever since. With four locations throughout Colorado, Boulder, Denver, Lafayette and Longmont, we're sure that there's a Proto's Pizza not far from you! Neapolitan pizza is the original pizza from Naples Italy. Proto's is like eating in the Old Country. The pizza pies are thin, bubbly and slightly charred. The flavors melt on my taste buds like a dream. The martinis are shaken hard and poured into ultra chilled glasses. The wine list is creative and original at Proto's Pizza. I slipped down some fresh oysters on the half shell to start my meal, and then sat back at the end of it all and devoured a cannoli and double espresso. I'll be back on Friday for their clam pizza. The owners, bakers and staff are dedicated to the belief that Proto's Pizza is the best pizza you'll ever eat.
Best way to have pizza for lunch. Great tasting and not fatty/carbohydrate stuffing. Other Pizzas make me lethargic all afternoon! Roomy and light price can be a little steep but a good treat when craving a lunch pizza.

The margarita pizza had little cheese (we had to add our own from the parmesian shaker) and 1 leaf of basil cut up and distributed 5 ways, barely enough to justify the extra $3. The waitstaff seemed as though they'd rather be somewhere else, they were all very young and put off by having to work. The bartender should really learn how to make a mojito, because club soda, rum, and lime just doesn't cut it. It was salty and just plain awful, we were really disappointed. When asking the person who made our mojio to bring us some sugar to add to the drink, they seemed confused and did little to investigate the problem. We've had our fair share of mojios and were really disgusted. The Proto's in LoDo was exponentially better, we will never return to this location again.
Pros: They had a toilet that flushed

I have no idea what the attraction is... to me it was like a small thin cracker with a hint of sauce and about 5 peperoni slices on it. It looked picture pretty with its rustic uneven shape and slight bows in the dough... "chic" but really....$20 for that? No thanks. But some people like it.

This pizza, if you like thin crust, is the best you'll ever eat. It's not a saucy pizza, but the perfect blend of sauce and cheese to melt in your mouth. The pizza preparation is a thing of beauty, complete with chairs in front of the window to watch them being hand tossed. Their salad is the best salad I've ever eaten as well. The service is the fastest and friendliest I've ever experienced. The wait staff is attentive and knowledgeable. I LOVE THIS PLACE!!
