I almost gave this restaurant 5 stars, but settled for four simply because 5 stars should be almost unatainable, after all 5 stars is a perfect rating. I would have given 4.8 if given the chance.

A pleasant atmosphere and extremly friendly and outgoing staff made for the perfect dining experience at the Brick Oven Bistro. The restaurant has amazing food (especially the soup) As the turkey for my hot turkey sandwich was carved right in front of me, I do believe I drooled some on my shirt watching my dream of a meal being made.

The restaurant supports local buisness, buys from local farmers, and uses renewable energy from a wind farm right here in Idaho.

The design and decor in the restaurant beg to be examined and respected. Many of the paintings serve as the beginnings of great table conversation and my soda was refilled 3 times without my having to ask. No placing an empty cup on the edge of the table, or noisily sucking melted ice through a straw just to get someone's attention, not here, not at the Brick Oven Bistro.

A near perfect meal matched only by what I am sure will come to be known as legendary hospitality, service, and attention to detail.

If you want the worlds best turkey and swiss sandwich, come here. If you crave the ultimate mashed potatoes with delectable corn gravy, you've found them. I could eat here every day and never get bored. They bake their bread daily and roast whole turkeys and hams daily for their sandwiches. And their mashed potatoes with skin on with corn gravy is to die for.

CONS: ALWAYS a long line, but so worth the wait!
