Hieberts is a Las Cruces tradition. It used to be on the corner of Main & Solano, and had a giant neon sign which was a landmark for the City of the Crosses for many years. They are now located on Solano & Madrid in a little ol' strip mall. Their famous Steak Fingers are fantastic! Lean strips of Sirloin Round, Battered and drenched in your choice of Green or Red Chile, Brown Gravy, or White Cream Gravy. You can't go wrong which ever you pick. If you want a great breakfast burrito, ask the cook or the waitress about "The Mexican Flag Burrito", it's not on the menu, but was invented by a group of Mailmen who eat breakfast every morning there before heading off to do their rounds. It's a great Meal-in-Itself Burrito with Eggs, Bacon, Potatoes, Cheese, and topped with Green AND Red Chile! (Green and Red on a "White" Burrito= "Mexican Flag") Oh, by the way, those steak fingers were recently listed in Maxim Magazine's article about "Eating your Way across America"!
