Class teaches you nothing about the real world of working in a bar. What's the point of learning how to make grasshoppers, pink squirrels and other drinks of years gone by? What makes more sense: making 12 drinks in 5 minutes (which is/was the test) or being able to whip up drinks while making change for pool players, explaining how the new jukebox works, pulling tickets for $40 in game #3, refusing service to the group of already drunk people that walk in and answering the phone in that same 5 minutes?
