We were looking for a quiet restaurant. Drove all over town and happened upon Galileo's. WOW, I was so happy we risked it. The food was divine. The menu was varied with pastas, fish, salads something for everyone. Portions are enormous. You can tell the owner actually cares if you are happy with your meal. I love it when there is a balance between attentive service and great food. Each can make or break the experience. If you are not that hungry I'd recommend splitting an entre, then saving room for the most remarkable Tiramisu on earth. Honestly I??d go back alone for desert and Chianti. Maybe I??ll take a book. In fact next time I'm in Pueblo or within 20 miles, I'll stop in.

It's small, but not too loud. You can easily have a conversation and enjoy your wine. Prices are reasonable. In fact I felt it was a value for the quality of cuisine. Strong recommendation on Galleo??s.

i have been on a quest for really good italian in sounthern colorado...i thought i had finally found it at galileo's...i had eaten there a few times, and really enjoyed the food...although the staple, a very basic red sauce had left me with something to be desired...
everything else i had tried was very good...including the bread...but i think maybe they should have remained a small little hole in the wall...the service, as is common in most restaurants in pueblo, is despicable...the few times i went, i was seated, and left...sitting, without even a glass of water in front of me...for at least ten minutes, yet there was ample staff to aknowledge we were there...
finaly we had a wonderful server from brazil, that made sure we were ok...if it wasn't for him, we would have never gone back...
we did, the same thing, the same server...as i was waiting, i had the chance to look around....the place needed to call merry maids...it was very dirty, and the silverware had spots, and dried food on it...
i'm not saying don't eat there,i would just advise you to schedule some extra time to your visit, and take your own handy wipes, as you may be doing your own dishes...

This restaurant is a pure gem in Pueblo. The food is probably the best Italian food my wife an I have had in Colorado. The ambiance of the restaurant is good for a lunch or a romantic dinner. My wife and I had the veal parmigian. The veal was fork tender and the fettucini was perfectly al dente. they were covered in the freshest, lightest most tasty sauce I have ever had. The menu is extensive and I plan to try each entree in
my future visits. Each meal is served with wonderful, crusty fresh bread and crisp salads. Soup is also offered. I had the fresh tomato that was as wonderful as the rest of the meal. Desserts include fresh made cannolis and new york style cheesecske. The only drawback to Galileo's is the lack of a liquor licensce. The food is so good that a good chianti would take it to another world. The service is wonderful and friendly. I would highly recommend this restaurant to anyone in southern Colorado. It would be worth the drive from Springs!!!
